Light Mac-n-Cheese with Warm Tomato Spinach Salad
14.5 oz pasta (I used Barilla Protein Plus Elbo)
2 Tblsp Butter
1 cup plus ½ cup extra sharp cheddar cheese
1 cup plain greek yogurt
2 eggs
2 Tblsp Grated parmesan cheese
Salt & pepper to taste
1. Cook pasta according to package to “al dente.”
2. In a sauce pan, on low heat, melt butter then stir in 1 cup cheddar cheese, yogurt, then the eggs to make a cream like sauce. Turn off stove.
3. Fold sauce into warm pasta. Add salt and pepper as desired.
4. Top with ½ cup cheddar cheese and then the parmesan.
5. Bake 350 F 20 – 25 minutes.

*Warm Citrus Vinaigrette over tomato Spinach Salad*
In a small sauce pan on medium heat, add 2 Tblsp olive oil & 1 Tblsp butter. When butter is melted, add 1 Tblsp minced garlic and 1-2 Tblsp fresh basil minced. Remove from heat and add 1 Tblsp lime juice, 1 Tblsp mandarin or orange juice, and 1 tsp aguave.
Toss in Tomatoes then and fresh spinach and red onions…salt & pepper as desired.
