Massaman Pumpkin Bake! (A Delicious Display!)

*Warning! It’s a long bake!!!!

1. 1 Medium Pumpkin (cut off top and clear insides of seeds and etc.)

2. Wisk the following ingredients (except onions) then stir in the sliced onions. Pour into pumpkin.
3. Wrap entire pumpkin with foil. Bake 400F degrees 45 minutes. Bake 375 45 minutes more or until desired tenderness of pumpkin.
4. Brown chicken, oil, and another Tblsp Massaman Curry Paste.
5. When chicken is cooked, stir in Zuchinni or a Favorite Veggie.Stir an addition 30 seconds or so. Don’t over cook!

6. Stir into curry. Serve over rice. Each person can dish up their curry and spoon the pumpkin meat as desired.

2 Tblsp Massaman Curry Paste
1 can Coconut Milk(13.5 oz)
1 Cup Chicken Broth
2 tsp Fish Sauce
2 Tblsp chopped peanuts
2 tsp sugar
1/2 tsp salt
1/4 tso accent (msg)
1sm yellw onion (sliced)

*Cook the following after the baking is done:
1 lb Chicken (thinly sliced)
1 Tblsp canola oil
1 Tblsp Massaman Curry Paste
1 cup veggie of your choice
